Chia Pudding! A very easy base to make with endless combinations to launch into! I have been eating chia pudding parfaits for breakfast every day for the last 2 weeks, and my body is running like a well oiled machine! I started with YUM Universe's recipe here, and then got creative with the toppings. My favorite so far has been layering almonds, cashews, toasted coconut, fresh fruit and blueberry date puree.
Chia Pudding Parfaits
- Make Chia Pudding using YUM Universe's Recipe.
- While chia pudding is resting for 30 min, make the following puree:
Blueberry Date Puree
- 1/2 cup frozen blueberries
- 4 medjool dates, pitted
- 3/4 cup almond milk, or enough to cover
- 1 tsp honey
- 1 tsp flax seeds
- 1/4 tsp turmeric powder (great for inflammation!
- METHOD: Put all ingredients in high power blender and blend until smooth!
4. Building your Parfait:
Layer your parfait: Chia Pudding, puree, toasted nuts, chia pudding, fresh sliced fruit, toasted coconut, 1 more heaping spoonsful pudding, a dollop of puree, a few peices of fruit and a sprinkle of coconut. Use a mason jar as your vessel, pop and lid on tight and enjoy at work! Will keep for 2-3 days in the fridge! In fact, if you leave it in the fridge for 12 hours or more, the nuts will become soaked and will therefor be extra delicious.
Chia is filled with fiber which helps to regulate digestion. You might notice your system running cleaner, and it also expands (soaking up water) in your stomach so keeps you feeling nice and full for quite a while. There have been studies showing that eating chia seeds can be good for your skin, help regulate insulin levels and it is full of antioxidants. It is one serious super food, go try some today!
